Air Conditioner

It was hot out the other day; perhaps it's hot where you are too. I needed an air conditioner and I thought of fish.

I will admit to being afraid of fish, or rather uncomfortable might be a better word. I watch my friends over at Beetses handle fish with calm and aplomb, and I hope one day to be able to do the same. Which brings us to tonight:

  1. Don't sweat the small stuff, and it's all small stuff. We make a little salsa of mint, peach, tomato, vinegar, and a splash of olive oil. Cover and put in the fridge to chill.
  2. Take your filet (I used halibut) and salt and pepper both sides. Meanwhile, heat up a pan (perhaps ferrous) with a generous amount of olive oil. Cook fish 4 minutes a side (or so).
  3. Plate the fish, spoon over the salsa. Don't forget to garnish.

Nathan: Wow, that looks deelishush.  Good on ya (as the guy at the local liquor drive-thru says.  Yes, in Ohio we have liquor/beer drive-thrus.)

subnaught: Drive-through liquor stores? I thought they only had those in Texas.
