Arugula

Without warning, some absolutely fantastic arugula has started appearing at the farmers' market, courtesy of Tomatero Farms. (You may have already noticed it.)
There's no need for good arugula to see a stove, so here it was simply tossed with the still-warm pasta, thereby tempering its flavor while avoiding outright wilting. This is then dressed with a mixture of parmesan, sour cream, bacon fat, vinegar, and black pepper and tossed with caramelized onions and bacon. Finish with a little more black pepper.
If vegetables tasted like this when I was a kid, I would have eaten a lot more of them...

Mark: We have been hitting up the arugula at Tomatero Farms as well. This recipe kicks the ass of all of my arugula recipes combined.
